  • 1 tablespoon olive oil
  • 1 pound ground turkey (or ground beef)
  • 1 medium onion, chopped
  • 2 cups sweet potatoes, peeled and diced into 1/2-inch cubes
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 cup frozen corn
  • 1 packet (1 ounce) taco seasoning mix
  • 1/2 cup water
  • 1/2 cup shredded cheddar or Monterey Jack cheese (optional)
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Heat the olive oil in a large, 12-inch skillet over medium-high heat.
  2. Add the ground turkey and chopped onion to the skillet. Cook, breaking up the meat with a spoon, until the turkey is browned and the onion is soft, about 5 to 7 minutes. Drain any excess grease from the skillet.
  3. Add the diced sweet potatoes, taco seasoning, and water to the skillet. Stir well to combine everything.
  4. Bring the mixture to a simmer, then reduce the heat to medium-low. Cover the skillet and cook for 10 to 12 minutes, stirring halfway through, until the sweet potatoes are tender when pierced with a fork.
  5. Stir in the rinsed black beans and frozen corn. Cook uncovered for another 3 to 5 minutes, until the beans and corn are heated through.
  6. Remove the skillet from the heat. If using, sprinkle the cheese evenly over the top of the skillet mixture. Cover the skillet again for 2 minutes to allow the cheese to melt.
  7. Garnish with fresh cilantro before serving. Serve this easy one pan dinner immediately.

  • For a gluten free skillet dinner, check that your taco seasoning packet is certified gluten free.
  • If you prefer ground beef sweet potato skillet, substitute ground beef for the turkey.
