1 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup (1 stick) unsalted butter, softened
1 cup creamy peanut butter, plus 1/4 cup for swirling
3/4 cup packed light brown sugar
1/2 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/2 cup sour cream or plain Greek yogurt
1 cup mashed very ripe bananas (about 3 large)
1/2 cup chocolate chips (optional)
Instructions
Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan, or line it with parchment paper.
In a medium bowl, whisk together the flour, baking soda, and salt. Set this dry mixture aside.
In a large bowl, use an electric mixer to beat the softened butter, 1 cup of peanut butter, brown sugar, and granulated sugar until the mixture is light and fluffy, about 2 minutes.
Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
Mix in the mashed bananas and sour cream until just combined. Do not overmix at this stage.
Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Stop mixing as soon as you see no more streaks of flour.
Fold in the chocolate chips, if using.
Pour half of the batter into the prepared loaf pan. Dollop the remaining 1/4 cup of peanut butter over the batter. Pour the remaining batter on top.
Use a butter knife or skewer to gently swirl the top layer of peanut butter into the batter to create a marbled effect.
Bake for 55 to 65 minutes, or until a wooden skewer inserted into the center comes out clean or with moist crumbs attached.
Let the bread cool in the pan for 15 minutes before carefully removing it to a wire rack to cool completely before slicing.
Notes
For the best moist banana bread texture, use bananas that are heavily spotted or almost black.
If you prefer a peanut butter swirl loaf without chocolate chips, omit them entirely.
You can substitute half the all-purpose flour with whole wheat flour for a heartier loaf.
