Make this simple, moist, and naturally gluten-free banana bread using only peanut butter and bananas. It is a quick, high-protein snack or dessert.

  • 3 large ripe bananas, mashed
  • 1 cup creamy peanut butter (natural style recommended)
  • 3 large eggs
  • 1 teaspoon baking soda
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a standard loaf pan (about 8×4 inches) with parchment paper.
  2. In a medium bowl, combine the mashed bananas, peanut butter, and eggs. Whisk until the mixture is smooth and well combined.
  3. Stir in the baking soda and vanilla extract until just incorporated. Do not overmix.
  4. Pour the batter into the prepared loaf pan.
  5. Bake for 45 to 55 minutes, or until a toothpick inserted into the center comes out clean or with moist crumbs attached.
  6. Let the bread cool in the pan for 10 minutes before carefully transferring it to a wire rack to cool completely before slicing.

Notes

  • For a richer flavor, use natural peanut butter where the oil separates slightly.
  • If you prefer a slightly sweeter bread, add 1-2 tablespoons of maple syrup, though the ripe bananas usually provide enough sweetness.
