Make these high-protein egg bites using cottage cheese for a fluffy texture, perfect for quick, grab-and-go breakfasts or meal prep. This recipe is a low-carb alternative to traditional breakfast options.

  • 1 cup dry curd cottage cheese
  • 1 cup Greek yogurt (plain, full-fat recommended)
  • 6 large eggs
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup cooked, crumbled bacon (optional add-in)
  • 1/4 cup chopped spinach (optional add-in)

Instructions

  1. Preheat your oven to 300°F (150°C). Lightly grease a 12-cup muffin tin or use silicone liners.
  2. In a blender, combine the cottage cheese, Greek yogurt, eggs, salt, and pepper. Blend until the mixture is completely smooth. This step is key for fluffy egg bites.
  3. Stir in your chosen add-ins, such as bacon, spinach, or cheese, into the blended egg mixture.
  4. Pour the mixture evenly into the prepared muffin cups, filling each about three-quarters full.
  5. Place the muffin tin into a larger baking dish. Carefully pour hot water into the baking dish until it reaches halfway up the sides of the muffin tin cups. This water bath creates steam for a tender texture, similar to sous vide.
  6. Bake for 25 to 30 minutes, or until the egg bites are set and a toothpick inserted near the center comes out clean.
  7. Carefully remove the muffin tin from the water bath. Let the egg bites cool in the tin for 5 minutes before removing them.
  8. Serve warm or store them for meal prep.

Notes

  • For a true Starbucks copycat texture, ensure your cottage cheese and yogurt mixture is fully blended until smooth.
  • These egg bites freeze well. Cool completely, then place them in a freezer-safe bag. Reheat from frozen in the microwave for 60-90 seconds.
  • You can substitute Greek yogurt with sour cream or cream cheese for a richer flavor profile.
