2 lbs ground beef (80/20 recommended)
1 large yellow onion, thinly sliced
1 (10.5 oz) can condensed French Onion Soup, undiluted
1/2 cup dry breadcrumbs
1 large egg, lightly beaten
1 teaspoon Worcestershire sauce
1/2 teaspoon dried thyme
1/4 teaspoon black pepper
4 slices Swiss cheese
Instructions
Place the thinly sliced onion in the bottom of a 5-quart or larger slow cooker.
In a large bowl, combine the ground beef, French Onion Soup (reserving 1/4 cup for topping), breadcrumbs, egg, Worcestershire sauce, thyme, and pepper. Mix gently with your hands until just combined; do not overmix.
Shape the meat mixture into a loaf shape and place it directly on top of the sliced onions in the slow cooker.
Pour the reserved 1/4 cup of French Onion Soup evenly over the top of the meatloaf.
Cover the slow cooker and cook on LOW for 5 to 6 hours or on HIGH for 3 to 3.5 hours.
During the last 15 minutes of cooking, remove the lid and place the Swiss cheese slices evenly over the top of the meatloaf. Replace the lid until the cheese is fully melted and gooey.
Carefully remove the meatloaf from the slow cooker using two large spatulas. Let it rest for 5 minutes before slicing and serving over the cooked onions.
Notes
For a more intense onion flavor, you can lightly sauté the sliced onions in butter for 10 minutes before placing them in the slow cooker.
If you prefer a firmer meatloaf, you can form the mixture into a loaf shape and place it on a small, oven-safe rack inside the slow cooker to keep it slightly elevated from the bottom.
This recipe works well served with mashed potatoes or egg noodles to soak up the juices.
