2 large yellow onions, thinly sliced
2 pounds beef stew meat, cut into 1-inch pieces
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon olive oil
4 cloves garlic, minced
8 cups beef broth
1/2 cup dry red wine (optional, substitute with more broth)
2 tablespoons Worcestershire sauce
1 tablespoon Dijon mustard
1 teaspoon dried thyme
1 bay leaf
12 ounces wide egg noodles
1 cup shredded Gruyère cheese (for topping)
Instructions
Place the sliced onions in the bottom of your slow cooker. Drizzle with olive oil.
In a separate bowl, toss the beef stew meat with salt and pepper. Add the seasoned beef on top of the onions.
Add the minced garlic, beef broth, red wine (if using), Worcestershire sauce, Dijon mustard, thyme, and bay leaf to the slow cooker. Stir gently to combine the liquids.
Cover and cook on low for 7 to 8 hours or on high for 3 to 4 hours, until the beef is very tender.
About 30 minutes before serving, remove and discard the bay leaf. Increase the slow cooker setting to high if it is on low.
Stir in the wide egg noodles. Cover and cook for 15 to 20 minutes, or until the noodles are tender. Check liquid levels; if the soup is too thick, add a splash of hot water or broth.
Ladle the soup and noodles into bowls. Top each serving generously with shredded Gruyère cheese. Cover the bowls with foil or place them under a broiler for 1-2 minutes until the cheese melts and browns slightly. Serve immediately.
Notes
For deeper onion flavor, you can sauté the sliced onions in a skillet with the olive oil over medium heat for 15 minutes before adding them to the slow cooker. This mimics stovetop caramelization.
If you do not have Gruyère, Swiss cheese works as a good substitute for the topping.
