1 medium onion, chopped
4 cloves garlic, minced
1 teaspoon dried Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
4 cups beef broth
12 ounces pasta (penne or rotini work well)
1/2 cup heavy cream
1/2 cup grated Parmesan cheese
2 tablespoons chopped fresh parsley, for garnish
Instructions
Brown the ground beef in a large pot or Dutch oven over medium-high heat. Drain off any excess grease.
Add the olive oil, chopped onion, and minced garlic to the pot with the beef. Cook until the onion softens, about 3 minutes.
Stir in the Italian seasoning, salt, and pepper. Cook for 1 minute until fragrant.
Pour in the beef broth and add the dry pasta to the pot. Bring the mixture to a boil.
Once boiling, reduce the heat to medium-low, cover the pot, and simmer for 12-15 minutes, stirring occasionally to prevent the pasta from sticking to the bottom. Cook until the pasta is tender and most of the liquid is absorbed.
Remove the pot from the heat. Stir in the heavy cream and grated Parmesan cheese until the sauce is smooth and creamy.
Let the pasta sit, uncovered, for 5 minutes to allow the sauce to thicken slightly.
Serve immediately, garnished with fresh parsley.

For a higher protein pasta dinner, use lean ground beef (90% lean or higher).
