  • 1 pound penne pasta
  • 1 tablespoon olive oil
  • 1 small yellow onion, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach

Instructions

  1. Slice the chicken sausage into rounds.
  2. Heat the olive oil in a large skillet or Dutch oven over medium-high heat. Add the sausage and cook until browned on both sides, about 5 minutes. Remove the sausage and set it aside.
  3. Add the chopped onion to the same skillet and cook until softened, about 3 minutes. Add the minced garlic, Italian seasoning, and smoked paprika. Cook for 1 minute until fragrant.
  4. Stir in the uncooked penne pasta, diced tomatoes (with their juice), chicken broth, salt, and pepper. Bring the mixture to a boil.
  5. Reduce the heat to medium-low, cover the skillet, and simmer for 10 to 12 minutes, stirring occasionally, until the pasta is nearly tender.
  6. Uncover the skillet. Stir in the heavy cream and return the cooked sausage to the pan. Let the sauce simmer gently for 2 to 3 minutes until the sauce thickens slightly.
  7. Stir in the Parmesan cheese until melted and smooth. Add the fresh spinach and cook until wilted, about 1 minute.
  8. Serve the creamy chicken sausage pasta immediately.
